Preheat oven to 350°F (175°C). Place 6 custard cups in a 9x13-inch baking dish. Bring a kettle of water to a boil. (5 minutes)

In a mixing bowl, combine brown sugar, pumpkin pie spice, cayenne pepper, vanilla extract, and orange juice. Stir in the lightly beaten egg whites until just combined. Gently fold in the pumpkin puree and evaporated milk until well blended. (10 minutes)

Carefully ladle the custard mixture into each cup, dividing evenly. Pour boiling water into the baking dish around the custard cups, reaching a depth of at least 1 inch to create a water bath. (5 minutes)

Bake in the preheated oven until a knife inserted into the center of a custard comes out clean, approximately 45 minutes. (45 minutes)

Carefully remove the baking dish from the oven and allow to cool slightly. Remove the custard cups from the water bath and let them cool completely on a wire rack. Refrigerate before serving. (30 minutes)

Garnish each serving with a tablespoon of real whipped cream, if desired, just before serving. (5 minutes)

For a richer flavor, consider using full-fat evaporated milk.
Adjust the amount of cayenne pepper to suit your personal preference for heat.
Ensure the water bath is deep enough to prevent the custards from drying out.
If you don't have custard cups, small ramekins will work as a substitute.
