For a vegetarian version, substitute vegetable broth for the beef broth and omit the ham. If you don't have sherry vinegar, apple cider vinegar or red wine vinegar can be used as a substitute. To add a touch of heat, add a pinch of cayenne pepper or a dash of hot sauce to the soup while simmering. This soup can be made ahead of time and reheated. The flavors will develop even more overnight!
