Place one slice of smoked provolone cheese into each chicken breast pocket. Layer a slice of prosciutto over the cheese, folding lightly to fit within the chicken. Spoon approximately 2 tablespoons of pesto over each chicken breast, then top with the quartered cherry tomatoes. Sprinkle the Italian-seasoned bread crumbs evenly over the top of each breast. (15 minutes)

Arrange the stuffed chicken breasts in a single layer in the prepared baking dish, with the stuffing facing upwards. (2 minutes)

Bake in the preheated oven for 30 to 40 minutes, or until the chicken is cooked through and the juices run clear when pierced with a fork. The internal temperature should reach 165 degrees F (74 degrees C) when measured with an instant-read thermometer. (35 minutes)

For a richer flavor, consider using sun-dried tomato pesto.
If you don't have smoked provolone, mozzarella or fontina cheese also work well.
To ensure even cooking, use chicken breasts of similar size and thickness.
Serve with a side of roasted vegetables, pasta, or a fresh salad for a complete and satisfying meal.
If the bread crumbs start to brown too quickly, loosely tent the baking dish with foil.
