In a large skillet, heat the olive oil over medium-high heat. Add the halved potatoes and cook until browned on all sides, approximately 10 minutes. Remove from the skillet and set aside.

Reduce the heat to medium. Sauté the chopped red onions in the skillet until translucent, about 2 to 4 minutes. Add the minced garlic, ginger, turmeric, cumin seeds, salt, and pepper. Cook until the spices release their fragrance, around 1 minute. Return the potatoes to the skillet and continue cooking until nearly tender, about 15 minutes.

Pour the coconut milk over the potatoes. Stir in the tomato puree and chopped fresh parsley. Simmer until the potatoes are fully cooked and the sauce has thickened to your desired consistency, approximately 5 minutes.

For a richer flavor, consider using full-fat coconut milk.
Adjust the amount of red pepper flakes to suit your spice preference.
Garnish with additional fresh parsley or cilantro before serving.
