In a heavy-bottomed pot or Dutch oven, heat olive oil and butter over high heat. Sear the pork shanks until deeply browned on all sides, approximately 3 to 4 minutes per side. Remove from pot and set aside. (Cook time: 15 minutes)

Reduce heat to medium. Add the diced onion, celery, carrot, and kosher salt to the pot. Cook, stirring occasionally, until the onion becomes translucent, about 5-7 minutes. Add the tomato paste and cook, stirring constantly, until it begins to caramelize, about 2 minutes. Sprinkle in the flour and stir continuously for another 2 minutes to create a roux. (Cook time: 16 minutes)

Pour in the white wine, increase the heat to medium-high, and simmer, scraping up any browned bits from the bottom of the pot, until the sauce has reduced slightly, about 5 minutes. Add the bay leaf, dried thyme, dried rosemary, and ground cloves. Pour in the chicken broth and bring to a simmer. (Cook time: 10 minutes)

Return the seared pork shanks to the pot, along with any accumulated juices. Cover the pot tightly and reduce the heat to very low. Simmer gently until the meat is fork-tender, approximately 3 to 3 1/2 hours. (Cook time: 180-210 minutes)

To serve, place the pork shanks on a serving platter or individual plates, spooning plenty of the rich braising sauce over the top. Garnish generously with chopped fresh parsley and freshly grated lemon zest. (Prep time: 5 minutes)

For an even richer flavor, consider adding a Parmesan cheese rind to the braising liquid. Remove before serving.
If you don't have dry white wine on hand, you can substitute with chicken broth. However, the wine adds important acidity and complexity to the sauce.
Serve with creamy polenta, risotto, or mashed potatoes to soak up the delicious sauce.
