In a large pot, place the pork and cover with water. Add soy sauce and lemon juice. Bring to a boil for 5 minutes. Remove the pork and discard the liquid. (5 minutes)

Refill the pot with fresh water, add the pork liver, and boil for 5 minutes. Remove the liver, let it cool slightly, and cut into bite-sized pieces. Set aside. (10 minutes)

Heat 3 tablespoons of olive oil in a large skillet over medium-high heat. Fry the potatoes until golden brown and cooked through, about 7-10 minutes. Remove the potatoes to a plate lined with paper towels. (10 minutes)

Add the remaining 2 tablespoons of olive oil to the skillet. Sauté the onion and garlic until fragrant, about 3-5 minutes. Add the pork and pork liver. Cover and cook for 5 minutes. (10 minutes)

Stir in the diced tomatoes. Cook, stirring occasionally, for another 5 minutes. (5 minutes)

Return the potatoes to the skillet, along with the green bell pepper. Season with salt and pepper. Cook and stir for a final 5 minutes, ensuring all flavors meld beautifully. (5 minutes)

For a richer flavor, marinate the pork in the soy sauce and lemon juice for at least 30 minutes before cooking.
Be careful not to overcook the liver, as it can become tough. It should be cooked just until firm.
Feel free to add other vegetables like carrots or peas to the Afritada.
Serve hot with steamed rice for a truly authentic Filipino experience.
