Drain the pineapple chunks, reserving the juice. (5 minutes)

Preheat oven broiler to High. Set a rack 8 inches from the heat source. Line a rimmed baking sheet with foil, and lightly oil the foil. (5 minutes)

Spread pineapple chunks, onion, and garlic onto the prepared pan in an even layer. (2 minutes)

Broil until the pineapple chunks and onions are nicely charred, about 5 minutes. Let cool to room temperature, about 15 minutes. (20 minutes)

Remove garlic cloves and set aside to cool. Transfer pineapple and onions to a blender. Peel the cooled garlic cloves and add them to the blender. Add the reserved pineapple juice, Sriracha, mint leaves, salt, and rice vinegar. (5 minutes)

Blend until the mixture reaches your desired consistency, from smooth to chunky. Taste and adjust seasoning as needed. (2 minutes)

Cover and refrigerate for at least 1 hour before serving. The salsa can be made up to 3 days in advance. (60 minutes)

For a smokier flavor, grill the pineapple, onion, and garlic instead of broiling.
Adjust the amount of Sriracha to control the heat level.
Fresh cilantro can be substituted for mint, or use a combination of both.
This salsa is excellent with grilled chicken, fish, or pork. It's also delicious with tortilla chips.
Try adding a squeeze of lime juice for extra zing.
