For a richer flavor, use full-fat coconut milk.
Be sure to stir constantly while the pudding is cooking to prevent lumps from forming.
If you don't have fresh orange zest, you can substitute 1/4 teaspoon of orange extract.
For an extra layer of texture, toast the shredded coconut before adding it to the pudding.
If you prefer a smoother pudding, you can blend the banana slices into the milk mixture before cooking.
Store leftover pudding in an airtight container in the refrigerator for up to 3 days.
