Follow The Directions

01

Step

Preheat your oven to 375 degrees F (190 degrees C). Lightly coat a casserole dish with cooking spray. (5 minutes)

02

Step

Using a sharp knife, create a pocket in each chicken breast. Make a shallow lengthwise cut down the middle of the top of each breast, stopping about 1 inch from the ends. Gently open the breast and create horizontal slices on both sides to form a 'T' shape. (10 minutes)

03

Step

Evenly distribute the ricotta cheese into the pockets of each chicken breast. Top with mozzarella string cheese and pesto. Season the outside of the breasts with garlic salt, black pepper, and Italian herb blend. (10 minutes)

04

Step

Place the stuffed chicken breasts in the prepared casserole dish and cover with aluminum foil. (2 minutes)

05

Step

Bake in the preheated oven for 25 minutes. Remove the foil and continue baking until the chicken is cooked through and the juices run clear, about 10 more minutes. Ensure an instant-read thermometer inserted into the center registers at least 165 degrees F (74 degrees C). (35 minutes)

For an extra touch of flavor, consider adding sun-dried tomatoes or roasted red peppers to the stuffing.
If you don't have mozzarella string cheese, shredded mozzarella can be used instead.
Serve with a side of roasted vegetables or a light salad for a complete and balanced meal.
Feel free to experiment with different types of pesto, such as sun-dried tomato pesto or basil pesto.
Chicken breasts can be pounded to an even thickness before stuffing to ensure even cooking.
