Bake in the preheated oven until very tender, 45 to 50 minutes. Cool squash slightly. (50 minutes)

Meanwhile, heat remaining 1 tablespoon olive oil in a 12-inch skillet over medium heat. Add sausage, onion, and bell pepper; cook and stir until sausage is browned and onion and bell pepper are crisp-tender, 6 to 8 minutes. (8 minutes)

Shred squash flesh with a fork; add to skillet. Cook and stir until heated through, about 2 minutes. (2 minutes)

Carefully stir in pesto and sprinkle with Parmesan cheese just before serving. (1 minute)

For an extra layer of flavor, consider adding a pinch of red pepper flakes to the skillet while cooking the sausage and vegetables.
If you don't have pre-made pesto on hand, you can easily make your own by blending fresh basil, pine nuts, garlic, Parmesan cheese, and olive oil in a food processor.
