For a richer flavor, use dark chocolate chips instead of semi-sweet. Line the baking dish with parchment paper for easy removal. If you don't have a candy thermometer, test for the soft-ball stage by dropping a small amount of the syrup into a cup of cold water. If it forms a soft ball that flattens when removed, it's ready. Store the fudge in an airtight container in the refrigerator for up to a week.
