Follow The Directions

01

Step

Preheat oven to 325 degrees F (165 degrees C). Grease and lightly flour a 5x9-inch loaf pan. (5 minutes)

02

Step

In a large bowl, cream together the sugar and softened butter with an electric mixer until light and fluffy. Beat in the eggs, one at a time, until well combined. Stir in the peach puree and almond extract. (10 minutes)

03

Step

In a separate medium bowl, whisk together the flour, baking soda, baking powder, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix. (5 minutes)

04

Step

Gently fold in the chopped toasted pecans. (2 minutes)

05

Step

Pour the batter into the prepared loaf pan and spread evenly. (2 minutes)

06

Step

Bake in the preheated oven for 50 to 60 minutes, or until a toothpick inserted into the center comes out clean. (60 minutes)

07

Step

Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely. (10 minutes)

For a richer flavor, consider browning the butter before creaming it with the sugar.
To toast pecans, spread them on a baking sheet and bake at 350°F (175°C) for 5-7 minutes, or until fragrant. Watch them carefully to prevent burning.
If using canned peaches, make sure to drain them well before pureeing.
This bread is delicious served warm with a pat of butter or a dollop of whipped cream.
