Follow The Directions

01

Step
2 mins

In a large, heavy-bottomed pot, combine olive oil, butter, and sliced garlic. Heat over high heat until the garlic begins to sizzle (approximately 2 minutes). Reduce heat to medium, add the sliced onions, and cook until translucent, stirring occasionally (2-3 minutes). Pour in the red wine and allow it to simmer until partially evaporated, concentrating the flavors (approximately 10 minutes).

02

Step
3 mins

In a food processor, combine the coarsely chopped tomatoes and basil leaves. Pulse until the mixture is coarsely blended, retaining some texture. Pour the tomato mixture into the pot with the onions and wine. Cook over medium heat, stirring every 5 minutes, until the sauce deepens in color and thickens slightly (approximately 40 minutes). Remove from heat.

03

Step
10 mins

Working in batches, carefully transfer the sauce to a food processor or blender and blend until completely smooth. Return the sauce to the pot. Stir in the tomato paste, smoked paprika, sugar, and cayenne pepper. Season to taste with sea salt. Simmer for an additional 5 minutes to allow the flavors to meld. Serve hot over your preferred pasta, garnished with fresh basil.

For an extra layer of flavor, consider adding a pinch of red pepper flakes along with the cayenne pepper.
If you prefer a sweeter sauce, add a bit more sugar to balance the acidity of the tomatoes.
This sauce freezes beautifully. Allow it to cool completely before transferring it to freezer-safe containers.
