Cover the bowl tightly with plastic wrap or transfer the dressing to an airtight container. Refrigerate for at least 30 minutes to allow the flavors to meld. This dressing is best used within 3 days. (30 minutes)

For a brighter flavor, add a squeeze of fresh lemon juice.
If you prefer a less tangy dressing, reduce the amount of red wine vinegar by a tablespoon.
Fresh herbs, such as parsley or chives, can be added for an extra burst of flavor. Add them just before serving.
Consider adding a pinch of red pepper flakes for a touch of heat.
The quality of your olive oil will greatly impact the flavor of the dressing, so use a good quality extra virgin olive oil.
This dressing is also excellent on green salads.
