In a skillet over medium heat, melt the butter. Add the grated red onion and sauté until softened and translucent, about 3-4 minutes. Remove from heat and let cool slightly. (5 minutes)

In a large bowl, gently combine the pork sausage, ground beef, panko bread crumbs, 1/2 cup of apple butter, sour cream, beaten eggs, salt, pepper, and allspice. Add the cooled sautéed onions. Use your hands to thoroughly mix until everything is evenly incorporated, but be careful not to overmix. (10 minutes)

Using a one-ounce cookie scoop or spoon, portion the mixture into meatballs. Gently roll each portion into a tight, uniform ball. Arrange the meatballs on the prepared baking sheet, close together but not touching. Aim for approximately 40-45 meatballs. (15 minutes)

Bake the meatballs for 15 minutes. While they are baking, prepare the glaze: In a small saucepan, whisk together the remaining 1/2 cup of apple butter, beef broth, honey, and a pinch of cayenne pepper. Heat gently over low heat, stirring occasionally, until the glaze is smooth and slightly thickened. (15 minutes)

After 15 minutes, remove the meatballs from the oven. Pour the apple butter glaze evenly over the meatballs, ensuring each one is generously coated. Return the baking sheet to the oven and bake for another 5-7 minutes, or until the meatballs are cooked through and the glaze is bubbly and caramelized. (7 minutes)

Remove the baking sheet from the oven. Gently shake the pan to loosen the meatballs. Let them rest for a few minutes before serving warm. Garnish with fresh thyme or parsley, if desired.

For a deeper flavor, consider using a smoked sausage.
If you prefer a spicier meatball, add a pinch of red pepper flakes to the meat mixture.
These meatballs are delicious served with mashed potatoes, polenta, or on their own as an appetizer.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently in the oven or microwave.
