Follow The Directions

01

Step

Melt butter in a 5- to 6-quart pot over medium heat. Add onion, celery, and carrot; saute until tender, about 5 minutes.

02

Step

Pour in chicken broth, tomatoes, wine, and lemon juice. Bring to a boil.

03

Step

Add tilapia, herbs, salt, and pepper. Reduce heat, cover pot partially, and simmer until tilapia starts to flake, about 10 minutes.

04

Step

Transfer tilapia to a plate and cover to keep warm.

05

Step

Simmer cooking liquid until slightly thickened, 10 to 15 minutes.

06

Step

Return tilapia to the pot and heat through, 1 to 2 minutes.

For a richer flavor, use fish stock instead of chicken broth.
Consider adding a pinch of red pepper flakes for a touch of heat.
Fresh herbs, such as parsley or basil, can be added at the end for a vibrant finish.
Other firm white fish like cod, haddock, or halibut can be substituted for tilapia.
