Preheat oven to 350 degrees F (175 degrees C). Lightly grease a baking sheet. (5 minutes)

In a large bowl, blend the applesauce, brown sugar, and honey until smooth. (2 minutes)

Gently fold in the oats, vanilla extract, almond extract, chopped dried apricots, sliced almonds, and dried cranberries until evenly distributed. (5 minutes)

Drop the batter by rounded teaspoonfuls onto the prepared baking sheet, leaving a little space between each bite. (5 minutes)

Bake for 12 to 15 minutes in the preheated oven, or until the bites are golden brown around the edges. (12-15 minutes)

For a richer flavor, toast the almonds lightly before adding them to the batter.
If you don't have whole wheat flour, you can use all-purpose flour instead, but the texture may be slightly different.
These bites can be stored in an airtight container at room temperature for up to 3 days, or in the refrigerator for up to a week.
