For a richer flavor, consider using a blend of different vanilla bean varieties. The longer the extract steeps, the more intense the flavor will become. Some enthusiasts steep for up to a year! Once you've used a portion of the extract, you can 'top off' the jar with more vodka to replenish it. Be sure to shake well. To create vanilla sugar, place a split vanilla bean (used or unused) into a jar of granulated sugar. Seal and let it infuse for several weeks, shaking occasionally.
