Follow The Directions

01

Step
7 mins

For the soup, heat olive oil in a 3 to 4 quart pot over medium heat. Add carrots and onions, and cook, stirring frequently, until vegetables are softened (5-7 minutes).

02

Step
26 mins

Add dried basil, salt, and black pepper, and stir for about 1 minute. Add tomatoes and their juices along with vegetable broth. Stir, bring to a boil, then reduce heat and slowly simmer uncovered (20-25 minutes). Add minced fresh basil and cream and simmer (5 minutes).

03

Step
5 mins

Puree the soup with a stick blender or a regular blender until smooth. Taste and adjust seasonings as needed.

04

Step
1 mins

Meanwhile, for the crostini, preheat the oven to 375 degrees F (190 degrees C). Line a baking sheet with parchment paper. Place baguette slices on the prepared pan.

05

Step
1 mins

Combine butter, granulated garlic, salt, and minced parsley in a bowl. Use a spatula to mash and stir until well mixed. Add shredded Parmesan and stir until a paste is formed.

06

Step
1 mins

Spread about 1 tablespoon of the garlic-Parmesan paste on each baguette slice.

07

Step
1 mins

Bake in the preheated oven until lightly browned and crunchy (12-15 minutes).

08

Step
15 mins

To serve, ladle soup into serving bowls and serve with crostini. Garnish with fresh basil leaves if desired.

For a richer flavor, roast the tomatoes before adding them to the soup. This intensifies their sweetness and adds depth.
If you don't have fresh basil, you can substitute with 1 teaspoon of dried basil, but fresh is highly recommended for the best flavor.
The crostini can be made ahead of time and stored in an airtight container at room temperature.
For a vegan version, substitute the heavy cream with cashew cream or full-fat coconut milk and use vegan Parmesan cheese.
