For a smoother consistency, pulse the chickpea mixture a bit longer. If you prefer a chunkier salad, reduce the pulsing time.
Adjust the amount of mayonnaise and Dijon mustard to your liking. For a tangier flavor, add a splash more pickle juice.
This salad is delicious served on bread, crackers, lettuce wraps, or straight from the bowl! Consider adding a sprinkle of smoked paprika for an extra layer of flavor.
Store any leftovers in an airtight container in the refrigerator for up to 3 days.
