Bring the water to a boil in a large saucepan over high heat. Slowly whisk in the grits, ensuring no lumps form. Reduce heat to medium-low and simmer, stirring frequently, until the grits are tender and have thickened to a creamy consistency. (5 minutes)

Heat a skillet over medium heat. Add the grated luncheon meat and cook, stirring occasionally, until lightly browned and crispy. Drain any excess grease. (8 minutes)

In a large bowl, combine the cooked grits, half of the browned luncheon meat, diced tomatoes (with their juices), sour cream, and half of the shredded Cheddar cheese. Mix well to ensure all ingredients are evenly distributed.

Pour the grits mixture into the prepared baking dish. Sprinkle the remaining luncheon meat and Cheddar cheese evenly over the top.

Bake in the preheated oven until the casserole is heated through, the cheese is melted and bubbly, and the top is golden brown. (30 minutes)

Let the casserole rest for 5-10 minutes before slicing and serving. This allows the flavors to meld and the casserole to set slightly.

For a spicier kick, add a pinch of red pepper flakes to the grits mixture.
Feel free to substitute other cheeses, such as Monterey Jack or pepper jack, for the Cheddar.
To make this casserole even richer, use milk or broth instead of water to cook the grits.
This casserole can be assembled up to 24 hours in advance. Simply cover and refrigerate until ready to bake. You may need to add 10-15 minutes to the baking time if baking from cold.
