Follow The Directions

01

Step

In a large mixing bowl, gently combine the rinsed and drained black-eyed peas, diced green chilies, red onion, jalapeño peppers (if using), pimento peppers, and minced garlic. (5 minutes)

02

Step

Pour the entire bottle of Italian-style vinaigrette over the mixture, ensuring all ingredients are well coated. (2 minutes)

03

Step

Cover the bowl tightly with plastic wrap and refrigerate overnight, or for at least 8 hours, to allow the flavors to meld and intensify. (8 hours)

04

Step

Before serving, give the caviar a good stir. Taste and adjust seasoning if needed, adding a pinch of salt or a dash of hot sauce for extra heat. (2 minutes)

For a milder flavor, remove the seeds and membranes from the jalapeño peppers before dicing. You can also substitute with a milder pepper like poblano.
Feel free to experiment with different types of Italian dressing. A creamy Italian or a balsamic vinaigrette can add a unique twist.
This caviar can be stored in an airtight container in the refrigerator for up to 5 days. The flavors will continue to develop over time.
Serve with tortilla chips, crackers, or use as a topping for grilled chicken or fish.

The overnight chilling makes all the difference. The flavors really come together, and it's so much better than when you just throw it all together.

My kids even like this! I leave out the jalapeños for them, and they eat it with veggie sticks.

I've made this twice now, and it's always gone in minutes. I add a little extra cilantro and lime juice to brighten it up.

I used a spicier Italian dressing and it was amazing! Definitely making this again.

I was a bit skeptical about the Italian dressing, but it actually works really well. It's tangy and flavorful without being overpowering.

Next time, I'm going to try adding some black beans for extra protein and fiber.

Fantastic recipe! I'm not usually a fan of black-eyed peas, but this has totally changed my mind.
