Preheat the oven to 375 degrees F (190 degrees C). Generously coat a 9x13-inch baking pan with nonstick spray. (5 minutes)

Heat vegetable oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spoon, until browned and no longer pink. Drain any excess grease. Add chopped onion and cook until softened, about 2 minutes. Stir in black beans, enchilada sauce, and chopped green chiles. Bring to a simmer and cook for 10 minutes, stirring occasionally, until the sauce has slightly thickened. (20 minutes)

Spread one-third of the beef mixture evenly over the bottom of the prepared baking pan. Arrange several corn tortillas over the meat mixture to completely cover the surface. Spread half of the sour cream evenly over the tortillas. Add another third of the beef mixture and spread evenly. Cover with another layer of tortillas and spread the remaining sour cream over the top. Top with the remaining beef mixture. (15 minutes)

Evenly sprinkle the crushed corn chips over the beef mixture, followed by the shredded Cheddar cheese. Arrange the sliced black olives and chopped tomatoes evenly over the cheese. (5 minutes)

Bake in the preheated oven for 35 minutes, or until the casserole is heated through, the cheese is melted and bubbly, and the corn chips are golden brown. Let stand for 5-10 minutes before serving. (40 minutes)

For an extra layer of flavor, consider adding a sprinkle of your favorite taco seasoning to the ground beef while it's cooking.
Feel free to substitute ground turkey or chicken for the ground beef.
If you prefer a spicier dish, use a hot enchilada sauce or add a pinch of cayenne pepper to the beef mixture.
This casserole can be assembled ahead of time and stored in the refrigerator for up to 24 hours before baking. Add about 10 minutes to the baking time if baking from cold.
