In a large bowl, combine the mashed banana, lemon juice, and salt. Beat with an electric mixer on medium speed until well combined. (Approximately 30 seconds)

Add the softened butter to the banana mixture. Beat on medium speed until light and creamy. (Approximately 1 minute)

Gradually add the sifted powdered sugar, 1 cup at a time, beating on low speed until each addition is fully incorporated. Once all the sugar is added, increase the speed to medium and beat until the frosting is smooth and fluffy. (Approximately 2-3 minutes)

For the best flavor, use ripe bananas with brown spots.
Sifting the powdered sugar helps prevent lumps in the frosting.
If the frosting is too thick, add a tablespoon of milk or cream at a time until you reach the desired consistency.
This frosting is best used immediately, but can be stored in an airtight container in the refrigerator for up to 3 days. Bring to room temperature and re-whip before using.
