Follow The Directions

01

Step

In a medium bowl, gently toss the cooked shrimp with olive oil, minced garlic, and a pinch of sea salt. Allow the shrimp to marinate while you prepare the mango salsa. (5 minutes)

02

Step

In a separate bowl, combine the diced tomatoes, mango, avocado, and green bell pepper. Add 3 tablespoons of fresh lime juice, the diced green chile pepper, and sugar. Gently mix all ingredients until well combined. Taste and adjust seasonings as needed. (10 minutes)

03

Step

Heat a large skillet over medium heat. Add the marinated shrimp to the skillet. Cook, stirring occasionally, until any excess moisture has evaporated and the shrimp is heated through. (3-5 minutes).

04

Step

Stir in the chopped fresh cilantro and tequila (if using). Cook for another minute to allow the flavors to meld. (1 minute)

05

Step

Serve the hot lime shrimp and fresh mango salsa over warm corn tortillas. Garnish with extra cilantro or a squeeze of lime, if desired. Enjoy immediately!

For a spicier salsa, leave the seeds in the green chile pepper.
If you don't have fresh mango, you can use frozen mango chunks (thawed and diced).
For a creamier taco, add a dollop of sour cream or Mexican crema.
Feel free to add other toppings like shredded cabbage, red onion, or a drizzle of your favorite hot sauce.
To prevent the tortillas from tearing, warm them in a dry skillet or microwave them wrapped in a damp paper towel.
