Preheat an outdoor grill to medium-high heat and lightly oil the grate. (5 minutes)

In a bowl, combine garlic, cumin, coriander, allspice, salt, and pepper. Add lamb and mix gently until just combined; avoid overmixing. Form mixture into 2-ounce patties. (10 minutes)

Grill patties on the preheated grill until cooked through, about 2 to 3 minutes per side for medium. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C). During the last minute of grilling, place rolls on the grill, cut-side down, to toast lightly. (8 minutes)

To assemble, layer spinach, tzatziki sauce, lamb patty, red onion, and feta cheese in each roll. Serve immediately. (5 minutes)

For an extra layer of flavor, try adding a squeeze of fresh lemon juice to the lamb mixture before grilling.
If you don't have an outdoor grill, a grill pan or skillet can be used indoors.
Feel free to adjust the amount of spices to your personal preference.
For a spicier kick, add a pinch of cayenne pepper to the lamb mixture.
