Follow The Directions

01

Step

Preheat the oven to 375 degrees F (190 degrees C). (5 minutes)

02

Step

Lay out two large pieces of heavy-duty aluminum foil per lamb chop. Place one piece vertically and another horizontally, creating a cross. The foil should be large enough to completely enclose a lamb chop and its accompanying vegetables. (5 minutes)

03

Step

Place one lamb chop in the center of the foil cross. Rub each chop with 1/2 tablespoon of minced garlic, 1/6 of the chopped fresh rosemary, salt, and freshly ground black pepper to taste. Repeat with the remaining chops. (10 minutes)

04

Step

Divide the mushrooms, carrots, zucchini, and sliced onions evenly among the lamb chops, creating a stack of vegetables on top of each chop. Place 1 tablespoon of butter on top of the vegetables. Drizzle each with 1 teaspoon of freshly squeezed lemon juice. Top each with one square of feta cheese. (10 minutes)

05

Step

Carefully wrap the top piece of foil around the lamb chop and vegetables, followed by the bottom piece. Tightly seal each package to create an airtight enclosure. This will steam the lamb and vegetables, infusing them with flavor. (10 minutes)

06

Step

Place the foil packages on a baking sheet. Bake in the preheated oven until the lamb is cooked but still slightly pink in the center. An instant-read thermometer inserted into the center of the lamb should read at least 140 degrees F (60 degrees C) for medium-rare. (30-40 minutes)

For richer flavor, marinate the lamb chops in garlic, rosemary, salt, and pepper for at least 30 minutes before assembling the foil packets.
Feel free to substitute vegetables based on your preferences and what's in season. Bell peppers, asparagus, or cherry tomatoes would all be excellent additions.
Ensure the foil packets are tightly sealed to trap the steam and ensure even cooking. A double layer of foil can prevent leaks.
Serve immediately after baking. Be careful when opening the foil packets, as steam will escape.
