Follow The Directions

01

Step

In a small, heavy-bottomed skillet, toast the cumin seeds, black peppercorns, cinnamon sticks, cardamom seeds, bay leaves, fennel seeds, cloves, and mace over medium heat until intensely fragrant and the spices begin to release their oils. (6-10 minutes)

02

Step

Remove the skillet from the heat and allow the spice mixture to cool completely. (15 minutes)

03

Step

Once cooled, transfer the toasted spices and nutmeg to a spice grinder or a clean coffee grinder. Grind until a fine, even powder is achieved. (2-3 minutes)

04

Step

Store the Kashmiri Garam Masala in an airtight container away from direct sunlight and heat. It will keep its flavor for up to 6 months.

For a deeper flavor, consider using a mortar and pestle to grind the spices by hand. This method releases more of the essential oils.
Adjust the quantity of each spice to suit your personal preference. Feel free to experiment!
This garam masala is particularly well-suited for dishes featuring lamb, chicken, or root vegetables.
