Follow The Directions

01

Step
5 mins

Heat olive oil in a large pot or Dutch oven over medium heat. Add the chopped red onion and minced garlic. Cook, stirring occasionally, until the onion is softened and translucent, about 5 minutes.

02

Step
5 mins

Stir in the vegetable broth, Italian-style diced tomatoes (with their juices), rinsed red lentils, uncooked brown rice, Italian seasoning, dried celery flakes, ground white pepper, and dried marjoram. Bring the soup to a boil.

03

Step
55 mins

Once boiling, reduce the heat to low, cover the pot, and simmer gently until the red lentils have broken down and the brown rice is tender. This usually takes about 55 minutes. Stir occasionally to prevent sticking.

04

Step
1 mins

Just before serving, stir in the balsamic vinegar to brighten the flavors.

For an extra layer of flavor, consider adding a bay leaf during the simmering process and remove it before serving.
If you prefer a smoother soup, you can use an immersion blender to partially blend the soup after it has simmered. Be careful not to over-blend, as you want to retain some texture.
This soup is delicious on its own, but it can also be served with a dollop of plain yogurt or a sprinkle of fresh parsley for added freshness.
To make this soup vegan, ensure your vegetable broth is vegan-friendly and omit any dairy-based toppings.
