For a richer flavor, use brown sugar instead of granulated sugar. Soaking the raisins in warm water or rum for 30 minutes before adding them to the dough will plump them up and make them even juicier. If you don't have buttermilk, you can make a substitute by adding 1 tablespoon of lemon juice or white vinegar to 2 ¼ cups of milk. Let it sit for 5 minutes before using. Feel free to add other dried fruits or nuts to the dough, such as dried cranberries, chopped walnuts, or pecans. Irish soda bread is best eaten fresh. Store leftovers in an airtight container at room temperature for up to 2 days.
