Follow The Directions

01

Step
5 mins

Combine all ingredients – diced chicken, chicken broth, water, coconut cream, garlic chile paste, coconut aminos, lime juice, salt, ginger, and Thai basil – in the Instant Pot®. (5 minutes)

02

Step
15 mins

Secure the lid, ensuring the valve is set to 'Sealing'. Select the 'Soup/Broth' function (or manual high pressure) and set the timer for 30 minutes. The Instant Pot® will take approximately 10-15 minutes to reach pressure. (15 minutes)

03

Step
15 mins

Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes. Then, carefully release any remaining pressure manually using the quick-release method. (15 minutes)

04

Step
5 mins

Unlock and carefully remove the lid. Stir the soup well. Taste and adjust seasonings as needed, adding more lime juice or salt to achieve your desired flavor balance. (5 minutes)

05

Step

Ladle the fragrant soup into bowls and garnish generously with fresh cilantro. Serve immediately and enjoy!

For a richer flavor, consider browning the chicken in a little coconut oil using the Instant Pot's sauté function before adding the other ingredients.
If you prefer a smoother soup, you can use an immersion blender to partially blend the soup after cooking.
To elevate the presentation, garnish with a lime wedge and a few slices of red chili.

I found it a bit too spicy for my taste, so I reduced the amount of garlic chile paste. It was perfect after that!

I've made this recipe several times and it's always a hit. I like to add a little fish sauce for extra umami.
