Engage the 'Sauté' function on your Instant Pot®. Introduce the olive oil and, once heated, add the chopped onion. Sauté until the onion becomes translucent, approximately 3 minutes, ensuring frequent stirring to prevent scorching. Incorporate the ground sirloin and continue to cook, breaking it apart with a spoon, until it loses its pink hue, about 5-7 minutes. Stir in the apple cider vinegar and allow it to simmer for 2 minutes, stirring occasionally.

Turn off the Instant Pot®. Introduce the diced tomatoes, kidney beans, pumpkin puree, ancho chile pepper, brown sugar, cumin, salt, black pepper, Worcestershire sauce, chipotle powder, and habanero hot sauce. Stir thoroughly to ensure all ingredients are well combined. Secure the lid, ensuring it is locked, and seal the vent. Select the high-pressure setting according to the manufacturer's guidelines; set the timer for 45 minutes. Allow 10-15 minutes for the pressure to build within the pot.

Once the cooking cycle is complete, allow the pressure to release naturally for 10 minutes, following the manufacturer's instructions. Carefully release any remaining pressure using the quick-release method, which should take about 5 minutes. Unlock and remove the lid.

Gently stir in the cinnamon oil, cilantro oil, and clove oil to infuse the chili with their aromatic essences. Ladle the chili into bowls or crocks.

For a richer flavor, consider browning the ground sirloin in a separate pan before adding it to the Instant Pot.
Adjust the amount of chipotle powder and habanero hot sauce to suit your preferred level of spice.
Feel free to experiment with other types of beans, such as black beans or pinto beans.
Top your chili with shredded cheddar cheese, a dollop of sour cream, avocado slices, taco chips, or chopped fresh cilantro for added texture and flavor.
