Engage the 'Sauté' function on your Instant Pot®. Introduce 1 tablespoon of olive oil to the pot. Once heated, add the tomatillos, jalapeños, and crushed garlic. Sauté, turning occasionally, until the tomatillos and jalapeños develop a light browning, approximately 6-7 minutes. If the garlic browns too quickly, remove it to prevent burning.

Carefully transfer the sautéed vegetables to a food processor. Add 2 cups of chicken broth and process until a smooth purée is achieved. Set aside.

Ensure the inner pot of your Instant Pot® is clean and dry. Re-engage the 'Sauté' function and add the remaining olive oil. Introduce the cubed pork, chopped onion, bell pepper, oregano, cumin, salt, and pepper. Stir frequently, adding more oil as needed, until the pork is browned on all sides and the vegetables have softened, about 7-8 minutes. Deactivate the 'Sauté' function.

Pour in the remaining chicken broth, using a wooden spoon to scrape any browned bits from the bottom of the pot. Stir in the reserved tomatillo purée, ensuring everything is well combined.

Secure the Instant Pot® lid, ensuring it is locked. Select the 'High Pressure' setting and set the timer for 25 minutes. Allow the Instant Pot® 10-15 minutes to reach full pressure.

Once the timer completes, allow the pressure to release naturally (Natural Pressure Release) for approximately 10 minutes. Carefully release any remaining pressure. Unlock and remove the lid. Stir in the freshly chopped cilantro. Serve hot!

For a richer flavor, sear the pork in batches to avoid overcrowding the pot.
Adjust the number of jalapeños according to your spice preference. Remove the seeds for a milder flavor.
For a thicker stew, whisk a tablespoon of cornstarch with a tablespoon of water and stir into the Chile Verde after pressure cooking. Simmer on 'Sauté' mode until thickened.
Serve with a dollop of sour cream or Mexican crema, and a sprinkle of crumbled Cotija cheese for added richness and flavor.
