Follow The Directions

Heat olive oil in the Instant Pot using the Saute function. Brown the chicken thighs on all sides (2-3 minutes per side). Remove and set aside.

Add the sliced onion and minced garlic to the pot. Sauté until softened (about 5 minutes), then stir in cinnamon, cumin, ginger, turmeric, red pepper flakes, and saffron. Cook for another minute until fragrant.

Return the chicken to the pot, nestling it on top of the onion mixture. Pour in the diced tomatoes and chicken broth. Sprinkle the halved apricots evenly over the chicken.

Season generously with salt and pepper. Close and lock the Instant Pot lid.

Cook on High Pressure for 15 minutes, allowing 10-15 minutes for the pressure to build.

Let the pressure release naturally (10-40 minutes). Carefully unlock and remove the lid.

Stir in the rinsed and drained chickpeas and fresh mint. Serve hot over couscous or rice.

For a richer flavor, use bone-in, skin-on chicken thighs. They will become incredibly tender during pressure cooking.
Adjust the amount of red pepper flakes to your preference. Start with a small amount and add more if you like it spicier.
If you don't have fresh mint, you can use 1 teaspoon of dried mint, but fresh is highly recommended for the best flavor.
Serve with a dollop of Greek yogurt or a sprinkle of toasted almonds for added richness and texture.
