Prepare & Preheat: Gather all ingredients. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper. Prepare two 6-ounce ramekins. (5 minutes)

Prepare Pastry: On a lightly floured surface, gently unfold the puff pastry sheet. Using a round cutter the same size as your ramekins, cut out two circles. Place pastry rounds on the prepared baking sheet and dock each generously with a fork. (5 minutes)

Blind Bake Pastry: Bake in the preheated oven until puffed and lightly golden, approximately 12-15 minutes. (15 minutes)

Cool & Deflate: Remove from oven and let cool slightly on the baking sheet. Gently press down the centers of the pastries with the back of a fork to create a shallow well. (5 minutes)

Increase Oven Temp: Increase the oven temperature to 425°F (220°C). (2 minutes)

Prepare Ramekins: Generously butter the insides of each ramekin with 1 1/2 teaspoons of butter. In a small bowl, combine brown sugar, granulated sugar, cinnamon, and salt. Divide most of the sugar mixture evenly between the ramekins, reserving about 1 1/2 teaspoons. (5 minutes)

Prepare Apple Ribbons: Fill a bowl with cold water and lemon juice. Core the apples, then peel to create thin ribbons of apple, dropping them immediately into the lemon water to prevent browning. (15 minutes)

Assemble Apple Roses: Gently dry a few apple ribbons at a time. Overlap the ribbons slightly and carefully roll the ribbon to form a tight rose shape. Place the rose in the ramekin. (10 minutes)

Repeat: Repeat the process of assembling apple roses until each ramekin is filled, gently pressing down. (10 minutes)

Butter & Sugar: Dot each tart with 1/2 teaspoon of butter and sprinkle with the remaining sugar mixture. (2 minutes)

Top with Pastry: Place a baked pastry round on top of each tart, fork-pricked side down. (2 minutes)

Bake: Bake in the preheated oven for approximately 25-30 minutes, or until the pastries are golden brown and the apple juices are bubbling. (30 minutes)

Cool & Invert: Remove from the oven and let cool slightly for about 5-10 minutes. Run a thin knife around the edge of each tart, then invert onto serving plates. (10 minutes)

Serve: Serve warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream. (2 minutes)

For an extra glossy finish, brush the warm tarts with melted apricot jam or a simple syrup after inverting.
If you don't have ramekins, you can bake these on a baking sheet as individual galettes.
Feel free to experiment with other apple varieties, such as Gala or Fuji.
