Prepare the Chiles: Bring 2 cups of water to a boil in a medium saucepan over medium-high heat. Add the guajillo and pasilla chiles. Reduce heat to medium-low; simmer until chiles soften, about 10 minutes. Transfer chiles to a plate; remove and discard stems and seeds. Discard the water.

Prepare the Pineapple and Onion: Strain the pineapple, reserving the juice and pineapple chunks separately. Coarsely chop ½ of the onion; thinly slice the remaining ½ onion and set aside for serving.

Create the Chile Paste: Combine the softened guajillo chiles, pasilla chiles, reserved pineapple juice, chopped ½ onion, white vinegar, minced garlic, chipotle pepper, and cumin in the bowl of a food processor. Purée until completely smooth, about 2 minutes. Transfer the mixture to a saucepan over medium-high heat; bring to a boil. Cook until the chile paste loses its raw onion taste, about 2 minutes. Season generously with Goya Adobo with Pepper. Allow the paste to cool completely.

Marinate the Pork: In a large glass or ceramic bowl (or a large resealable plastic bag), combine the pork cubes, cooled chile paste, and pineapple chunks. Toss well to ensure the pork is thoroughly coated. Cover the bowl or seal the bag, removing any excess air. Marinate in the refrigerator for at least 2 hours, or ideally overnight (up to 24 hours) for maximum flavor penetration.

Cook the Pork: Heat the vegetable oil in a large skillet over medium-high heat. Remove the pork and pineapple from the marinade, shaking off any excess (discard the marinade). Cook the pork and pineapple in batches in the hot skillet, ensuring not to overcrowd the pan, until the pork is deeply browned on all sides and cooked through, about 15 minutes. Transfer the cooked pork and pineapple to a large serving plate.

Assemble and Serve: Warm the Goya corn tortillas according to package directions. Serve the flavorful pork and pineapple mixture in the warm tortillas, garnished with the sliced onion, fresh cilantro, and lime wedges. A squeeze of fresh lime juice is the perfect finishing touch!

For a deeper smoky flavor, lightly toast the dried chiles in a dry skillet before soaking them.
If you don't have a food processor, you can use a blender to make the chile paste. You may need to add a little water to help it blend smoothly.
Marinating the pork for a longer period will result in a more tender and flavorful taco filling.
To add a touch of heat, consider adding a pinch of cayenne pepper to the chile paste.
Feel free to adjust the amount of Goya Adobo with Pepper to your liking. Taste and season accordingly.
