Heat olive oil in a large skillet over medium heat. Add the chopped bell peppers and onions. Cook, stirring occasionally, until the onions soften and become translucent (approximately 5 minutes). Add the minced garlic and cook until fragrant (about 1-2 minutes). Transfer the mixture to a slow cooker.

Add the chopped zucchini, yellow squash, and fresh spinach to the slow cooker. Stir to combine all the ingredients. Mix in the diced tomatoes, drained corn, black beans, kidney beans, garbanzo beans, tomato paste, and vegetable broth. Season generously with chili powder, dried oregano, ground cumin, salt, and pepper.

Cover the slow cooker and cook on Low heat for 4 to 5 hours, or until the vegetables are tender and the flavors have melded together beautifully. Stir occasionally during cooking.

For a richer flavor, consider adding a tablespoon of cocoa powder or a dash of liquid smoke to the chili.
Adjust the amount of chili powder according to your preferred level of spiciness.
Serve this chili with your favorite toppings, such as vegan sour cream, shredded cheese, avocado slices, or a dollop of plain yogurt.
