Heat half the oil (1 tablespoon) in a large skillet over medium-high heat. Add sliced onions, sweet peppers, and half of the salt and pepper (0.25 teaspoon each). Cook, stirring occasionally, until the vegetables are tender, about 5 minutes. Remove from skillet and reserve.

Add the remaining oil (1 tablespoon) to the same skillet. Crumble in the ground turkey, and add minced garlic, chili powder, and the remaining salt and pepper (0.25 teaspoon each). Sauté until the turkey is browned, approximately 5-7 minutes. Stir in half of the chili sauce (0.75 cup) and all of the ketchup (2 tablespoons). Bring the mixture to a simmer.

Warm the tortillas according to package directions (usually a few seconds per side in a dry skillet or microwave).

Assemble your fajitas: Spread a spoonful of the meat mixture onto each tortilla. Top with the sautéed vegetables, shredded cheese, lettuce, sour cream, and the remaining chili sauce. Fold and enjoy!

For an extra layer of flavor, try marinating the ground turkey in a mixture of lime juice, soy sauce, and a touch of honey before cooking.
Feel free to substitute ground beef, chicken, or even plant-based protein for the turkey.
