Follow The Directions

01

Step

Prepare the Grill: Preheat your grill to medium heat (about 350°F or 175°C) and lightly oil the grates to prevent sticking. (5 minutes)

02

Step

Prepare the Lime: Pour the sugar into a shallow dish. Take each lime half and gently press the cut side into the sugar to create a coating. (2 minutes)

03

Step

Grill the Fruit: Arrange the sugared lime halves and pineapple wedges on the preheated grill. Grill, turning occasionally, until the fruits are lightly browned and caramelized, approximately 5 to 10 minutes. Remove from the grill and allow to cool slightly. (10 minutes)

04

Step

Chill the Glassware: Fill an Old Fashioned glass with ice to chill while preparing the cocktail. (2 minutes)

05

Step

Extract Juices: Once the grilled fruits are cool enough to handle, squeeze 1/2 fluid ounce of juice from one of the grilled lime halves and 1 fluid ounce of juice from the grilled pineapple into a cocktail shaker. (3 minutes)

06

Step

Combine Ingredients: Add the aged gold rum, light silver rum, triple sec, and orgeat syrup to the cocktail shaker. (1 minute)

07

Step

Chill and Shake: Fill the shaker with ice. Secure the lid and shake vigorously until the outside of the shaker is well-chilled and frosted. (2 minutes)

08

Step

Strain and Serve: Discard the ice from the chilled Old Fashioned glass. Strain the cocktail mixture into the glass over fresh ice. (1 minute)

09

Step

Garnish: Garnish with a grilled pineapple wedge, grilled orange wheel, and Bing cherries, if desired. Serve immediately and enjoy! (2 minutes)

For a more intense smoky flavor, consider using wood chips, such as hickory or mesquite, in a smoker box on your grill.
Adjust the sweetness to your preference by adding a splash of simple syrup or agave nectar.
If you don't have a grill, you can achieve a similar effect by using a grill pan on your stovetop or broiling the fruit in your oven.
For a non-alcoholic version, replace the rums with pineapple juice and a splash of grenadine or maraschino cherry juice.
