Follow The Directions

01

Step

Arrange bacon slices side by side, lengthwise, on a sushi mat. (Prep time: 5 minutes)

02

Step

In a bowl, combine ground beef and barbecue spice rub. Spread the mixture in a thin, even layer over the bacon, leaving a 1-inch border at the far end. Top with prosciutto. Arrange jalapeno strips across the edge closest to you, followed by the pepper Jack cheese sticks. (Prep time: 10 minutes)

03

Step

Using the sushi mat, tightly roll the bacon mixture away from you towards the uncovered end. Ensure the roll is firm and compact. (Prep time: 5 minutes)

04

Step

Preheat your grill to 350 degrees F (175 degrees C). Place the bacon roll seam-side down over indirect heat. Grill until the bacon is crisp and cooked through, approximately 25 minutes. (Cook time: 25 minutes)

05

Step

Brush barbecue sauce over the roll. Continue grilling until the sauce is nicely glazed, about 5 minutes. Add remaining barbecue sauce; grill for 5 minutes more. (Cook time: 10 minutes)

06

Step

Remove the roll from the grill and evenly coat it with French-fried onions, pressing gently to adhere. (Prep time: 3 minutes)

07

Step

Slice the roll into individual pieces and serve immediately. Chopsticks are optional but encouraged! (Prep time: 2 minutes)

For a milder spice level, remove the seeds and membranes from the jalapenos before slicing.
Feel free to experiment with different cheeses or sauces to customize your roll.
Ensure the ground beef is cooked to a safe internal temperature of 160°F (71°C).
If you don't have a grill, you can bake the roll in the oven at 375°F (190°C) for about 30-40 minutes, or until the bacon is crispy.

I found that chilling the roll in the freezer for about 15 minutes before grilling helped it hold its shape better.

My bacon roll fell apart on the grill. Next time, I'll try securing it with toothpicks.

I used a sweeter BBQ sauce, and it complemented the spiciness of the jalapenos perfectly.
