For an extra touch, consider adding a simple glaze made with powdered sugar and milk after the cake has cooled. If fresh rhubarb isn't available, frozen rhubarb (thawed and drained) can be used. Walnuts can be substituted for pecans, or you can omit the nuts altogether for a nut-free version.
