Follow The Directions

01

Step

Preheat oven to 325 degrees F (165 degrees C). Grease and flour a 10-inch fluted tube pan (such as a Bundt® pan). (5 minutes)

02

Step

In a large bowl, beat together the yogurt, white sugar, 1 cup of brown sugar, eggs, and vanilla extract using an electric mixer until smooth and well combined. (3 minutes)

03

Step

In a separate medium bowl, whisk together the gluten-free flour, flaxseed, cinnamon, salt, cloves, and nutmeg. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Gently fold in the shredded apples. (5 minutes)

04

Step

Pour the batter into the prepared pan and spread evenly. Bake in the preheated oven until a wooden skewer inserted into the center of the cake comes out clean or with just a few moist crumbs attached, about 70-75 minutes. (70-75 minutes)

05

Step

Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely. (10 minutes)

06

Step

While the cake is cooling, prepare the caramel sauce: In a medium saucepan, melt the butter over medium heat. Stir in the remaining 1/2 cup of brown sugar and milk. Bring to a simmer, stirring constantly until the sugar is dissolved and the sauce is smooth. (3 minutes)

07

Step

Remove the saucepan from the heat and let the caramel sauce cool slightly, allowing it to thicken for about 10 minutes. (10 minutes)

08

Step

Once the cake is completely cooled, drizzle the caramel sauce evenly over the top, allowing it to cascade down the sides. Slice and serve.

For best results, use a high-quality gluten-free all-purpose flour blend that contains xanthan gum. This will help to give the cake a better texture.
Shred the apples just before adding them to the batter to prevent them from browning.
If you don't have vanilla yogurt, you can use plain yogurt and add an extra 1/2 teaspoon of vanilla extract.
The caramel sauce can be made ahead of time and stored in the refrigerator. Reheat gently before drizzling over the cake.
To add some extra crunch, sprinkle chopped pecans or walnuts over the cake after drizzling with the caramel sauce.
