For a smoother soup, use an immersion blender to partially blend the vegetables before adding the cheese and milk.
Feel free to experiment with different vegetables such as zucchini, corn, or bell peppers.
For a richer flavor, use a combination of cheddar and Gruyere cheese.
If the soup is too thick, add more milk to reach your desired consistency.
Garnish with extra chives or a swirl of cream before serving.
