For a richer flavor, consider using smoked bacon. If you don't have time to soak the beans, you can use the quick-soak method: cover the beans with water in a pot, bring to a boil for 2 minutes, then remove from heat and let soak for 1 hour. Adjust the amount of jalapeños to your desired level of spice. If you prefer a thicker stew, mash some of the beans against the side of the slow cooker before serving. Serve with your favorite toppings, such as sour cream, shredded cheese, or a squeeze of lime juice. This recipe can also be made on the stovetop. After sautéing the aromatics, transfer everything to a large pot, cover with water, and simmer for 2-3 hours, or until the beans are tender.
