While the oil is heating, carefully cut the hard-cooked eggs in half lengthwise and remove the yolks. Place the yolks in a small bowl. (Prep time: 3 minutes)

Using a fork, mash together the yolks, mayonnaise, relish, Dijon mustard, black pepper, and 1/2 teaspoon of the kosher salt until the mixture is smooth and well combined. Transfer the mixture to a piping bag or a zip-top plastic bag. Set aside. (Prep time: 7 minutes)

Place the flour in a small bowl, the beaten eggs in another bowl, and in a third bowl, mix together the panko breadcrumbs, Parmesan cheese, garlic powder, cayenne pepper, and the remaining 1/4 teaspoon of kosher salt. (Prep time: 5 minutes)

Dredge each egg white half in the flour, gently shaking off any excess. Next, dip it in the beaten eggs, allowing any excess to drip off. Finally, dredge the egg white half in the panko breadcrumb mixture. Place the coated egg white halves on a clean plate. (Prep time: 10 minutes)

Working in batches of two, carefully fry the coated egg whites in the hot oil until they are golden brown, approximately 30 seconds to 1 minute per batch. Adjust the heat as needed to maintain the oil temperature at or above 360 degrees F (180 degrees C). (Cook time: 5-7 minutes)

Transfer the fried egg whites to a paper towel-lined plate to drain any excess oil. (Cooling time: 2 minutes)

Pipe the egg yolk mixture evenly (about 1 tablespoon each) into the center of each fried egg white half. Garnish with chopped fresh chives and paprika. Serve warm with hot sauce on the side. (Assembly time: 5 minutes)

For a spicier kick, add a pinch of cayenne pepper to the yolk mixture.
Ensure the oil is hot enough before frying to achieve maximum crispiness and prevent the eggs from becoming soggy.
If you don't have a piping bag, a zip-top plastic bag with a corner snipped off works just as well.
Feel free to experiment with different types of hot sauce to find your favorite pairing.
For easier handling, chill the breaded egg whites in the refrigerator for 15-20 minutes before frying.
