Follow The Directions

01

Step

Preheat oven to 350°F (175°C). Place butter in a 9x13 inch baking dish and place in the oven to melt. (5 minutes)

02

Step

In a medium bowl, whisk together the eggs, salt, sugar, pepper, milk, and flour until smooth. Gently stir in the fresh corn kernels. (5 minutes)

03

Step

Once the butter is fully melted, carefully remove the baking dish from the oven. Pour the melted butter into the corn mixture, stirring well to combine. Pour the corn mixture back into the prepared baking dish. (2 minutes)

04

Step

Bake in the preheated oven for 1 hour, or until the pudding is set in the center and golden brown on top. A knife inserted near the center should come out clean. (60 minutes)

05

Step

Let cool slightly before serving. Pudding will continue to set as it cools. (10 minutes)

For enhanced flavor, try browning the butter on the stovetop before adding it to the recipe. Be sure to watch it closely as browned butter can burn easily.
Fresh corn is essential for the best flavor. If fresh corn is not available, frozen corn can be used, but thaw and drain it well before adding.
To add a touch of spice, consider including a pinch of cayenne pepper or a finely chopped jalapeño into the batter.
This pudding is delicious on its own, or as a side dish alongside roasted meats, poultry, or vegetarian entrees.
