Meanwhile, in a separate skillet, sauté beef with the remaining 1/2 cup onion and 1/2 cup green bell pepper over medium-high heat until beef is browned and cooked through, and vegetables are tender, about 8-10 minutes. (10 minutes)

Stir in remaining red chile sauce, Mexican-style tomato sauce, cumin, and remaining 1/2 teaspoon salt. Simmer uncovered for 15 minutes, stirring occasionally, to allow flavors to meld. (15 minutes)

Turn rice onto a serving platter and fluff with a fork. Sprinkle with shredded Monterey Jack cheese. Top with the beef mixture. Serve immediately with warm corn tortillas and your favorite salsa.

For a spicier kick, add a pinch of cayenne pepper or a finely chopped jalapeño to the beef mixture.
Use pre-shredded cheese to save time.
Try using brown rice for a nuttier flavor and added fiber, but increase the cooking time accordingly.
