If fresh corn isn't available, frozen corn kernels work perfectly well. Just be sure to thaw them before adding to the skillet.
To prevent the avocado from browning, toss it with the lemon juice separately before adding it to the black bean mixture.
Adjust the amount of Adobo seasoning to your preference. Start with a smaller amount and add more as needed.
This dish is also delicious served over rice or quinoa for a heartier meal.
