For an extra layer of flavor, spread a thin layer of salsa over the top of the meatloaf during the last 15 minutes of baking. Feel free to experiment with different types of cheese or add-ins, such as diced onions, bell peppers, or jalapenos. To prevent the meatloaf from sticking to the pan, you can line the loaf pan with parchment paper, leaving an overhang to easily lift the meatloaf out after baking.
