Step

In a chilled bowl, whip the heavy cream with 3 tablespoons of sugar using an electric mixer until stiff peaks form. (5 minutes) Gently set aside in the refrigerator.

In a separate bowl, combine the ricotta cheese, sour cream, and remaining 1 cup of sugar. Beat until smooth and well combined. (3 minutes)

Gently fold the whipped cream into the ricotta mixture. Stir in the dark rum (or coffee liqueur) until just combined. Be careful not to overmix. (2 minutes)

Pour the cooled coffee into a shallow bowl. Quickly dip each ladyfinger into the coffee, ensuring they are moistened but not soggy. (10 minutes)

Arrange a layer of coffee-soaked ladyfingers in a single layer at the bottom of a 2- to 2 1/2-inch deep rectangular serving dish. Spread half of the ricotta cream mixture evenly over the ladyfingers. (5 minutes)

Repeat the process with the remaining ladyfingers, dipping them in coffee and arranging them over the cream layer. Spread the remaining ricotta cream mixture evenly on top. (5 minutes)

Cover the dish tightly with plastic wrap and refrigerate for at least 10 to 12 hours, or preferably overnight, to allow the flavors to meld and the tiramisu to set. (10-12 hours)

For an extra touch, dust the top of the tiramisu with cocoa powder just before serving.
If you prefer a less boozy flavor, you can substitute the rum with coffee extract or omit it altogether.
For a richer flavor, use whole milk ricotta cheese.
Make sure your coffee is cool before dipping the ladyfingers, or they will become too soggy.
Do not overmix the whipped cream when folding it into the ricotta mixture, or it will deflate.
